We are in the midst of October and deep into fall and you know what that means? It’s pumpkin season. It is actually my favorite time of year, though it’s a little different being in Dallas. Yes, pumpkin flavored everything is everywhere and of course most of them (if not all) are unhealthy and extremely bad for your waist line.

But don’t fret, you don’t need to give up your love for pumpkin everything. I have a recipe that is not only easy and quick but is great tasting and healthy! Perfect for those on a Keto and Paleo diet or anyone wanting a healthier snack.

Pumpkin spice fat bombs
Note: 1/2 cup coconut sugar can be used for Paleo

Instructions
  1. Mix all the ingredients in a bowl and place in the freezer for 30 minutes. Roll into balls and place on a plate. Let the balls sit in the refrigerator for 1 hour before eating. Keeps for a week or longer in the freezer, but trust me, they will be gone fast!

      Thank you for your response! Fat bombs are popular in the Paleo and Keto (higher fat/low carb) world. A long time ago I found the recipe on a blog but I tweaked it to make my own. I am glad this can help quench your pumpkin craving (as it did mine) and is quick to meet your busy lifestyle.
